As a kid I would never touch a sweet potato. It wasn't until my late twenties that I got brave enough to try them. Love at first bite, the problem is is that they were completely slathered in fat and sugar. I started experimenting with them until I found a way that even my husband and kids will eat them willingly. This is my absolute fave!
One large sweet potato
Juice of one lime
Cracked salt & cracked pepper to taste
Preheat oven to 400 degrees. Skin and slice your sweet potato in to fat fry size wedges. Toss with the juice of one lime and about two tablespoons of olive oil. Sprinkle with cracked salt and cracked pepper to taste. Spread into a large greased casserole dish. Place in oven and cook for about 35-45 minutes, stirring every 15-20 minutes, until potatoes are soft and are starting to blacken on the edges. Add more salt and pepper if needed.
